1Add the almonds to the Mixing Bowl and grind for 5 sec. / Speed 5
2Transfer the almonds to a separate bowl to used them later
3Wipe the Mixing Bowl clean and add the milk, yeast, and 1 teaspoon sugar. Mix 4 min. / 37 °C / Speed 1.5
4Add the flour, remaining sugar, soft butter, vanilla sugar and the egg. Knead / 2 min.
5Add the cranberries and Knead / 1 min.
6Transfer the dough into a separate bowl and let is rest for 15-30 min. in a warm place
7In the meantime lay a baking tray with baking paper
8The dough should have started to rise. Knead the dough by hand on a floured, flat surface
9Cut off some dough using your spatula and form round ball, approx. 8 cm in diameter. Place the dough balls on the baking tray and press them to a nice oval
10Let the dough buns rise for another 30 min. and pre-heat your oven 180 °C in the meantime
11Separate the egg and mix the egg yolk with a tablespoon of milk. Brush the top of each bun with the milk-egg mixture and sprinkle some crushed almonds (step 1) and some sugar on top
12Bake for 25 - 30 min. until golden brown
Please note: While most recipes are designed for the TM5 and TM31, some might not fit the older Thermomix model. The TM31 has a lower Mixing Bowl capacity (2 litres) and a smaller Varoma (3 litres).
